Avocado, Tomato and Red Onion Salad
A good salad doesn't need to get any more complicated than this when tomatoes are at their peak!
Ingredients
- 2 Hass avocados, peeled, pitted, and sliced
- 1 pound Roma tomatoes, quartered
- 1/2 cup thinly sliced red onion or shallot
- 1/2 cup flat-leaf parsley leaves
- Salt and freshly ground black pepper, to taste
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon freshly squeezed lime juice
- 6 to 8 ounces blue cheese, crumbled
Directions
Arrange avocados on a platter and season with salt and pepper. In a small bowl, combine tomatoes, onion, and parsley; season with more salt and pepper and arrange over avocados. Drizzle olive oil and lime juice over top, add blue cheese, and serve immediately.
