Braised Red Cabbage
Ingredients
- One-fourth cup butter
- 3 pounds sliced red cabbage
- One-half onion, sliced
- One-fourth cup sugar
- 2 slices bacon
- 1 Granny Smith apple, cored, peeled and chopped
- 1 cup cranberry juice
- One-fourth cup red wine vinegar
- One-fourth cup red wine
- 1 stick cinnamon
- 4 whole garlic cloves
- 2 bay leaves
- 3 juniper berries
- Salt and freshly ground black pepper to taste
Directions
- Melt the butter in a heavy skillet; add the onion and simmer for two minutes. Add the remaining ingredients and mix well. Cover the pot and braise the mixture over low heat until the cabbage is tender, about one hour. Mix the cabbage from time to time and make sure the liquid does not completely evaporate. Adjust the seasoning with salt and pepper to taste.
