Everything you want in a queso dip: roasted fresh poblano chiles coated with a creamy cheese sauce. If your chiles don't have enough heat, you can always stir in a little cayenne or some spicy salsa to liven things up.
While you are frying the chicken, make sure the temperature of the oil hovers between 280 and 325 degrees (the temperature of the oil with drop from 375 when you add the first batch of chicken),making sure it doesn't get to hot.
