You will love the ease and beauty of this roast that will please everyone. The ends will be medium well, and the center will be beautifully medium rare. Allow it to rest at least 1 hour before carving. This way all of the delicious juices will be redistributed throughout the meat and every bite will be moist and tender. Leftovers make the best steak sandwiches!
Don't use non-stick muffin tins for these. You need the aluminum ones. The tins must be very hot and the pudding batter needs to be able to "grip" the sides in order to have their characteristic rise. Make the batter while the Prime Rib is in the oven, once you pull the roast, crank up the temp and bake these while it's resting.
