- 1.5 oz chipotle chilies in adobo sauce
- 1 limeís juice
- 1 ancho chili, seeded and minced
- 1 teaspoon garlic
- 1 teaspoon sugar
- 1 cup olive oil
- Salt and freshly ground black pepper
- Combine chipotle chilies, lime juice, ancho chili, garlic and sugar in a bowl. Using a pestle mash the ingredients until they form a paste. Then whisk in olive oil very gradually until emulsified. Season with salt and freshly ground black pepper to taste.
