- One and three-fourths cups water
- 2 cups sugar
- One and one-half cups fresh lemon juice
- 1 tablespoon grated lemon zest
- Combine all ingredients and place in an ice cream maker or mix together in a bowl a freeze in a cake pan. Stir (scraping the mixture to help smooth out the ice granules) every hour or so for 2 hours. Beat the mixture with a portable mixer or wire whisk for several minutes until it begins to be thoroughly chilled. Cover and place in the freezer until frozen, stirring occasionally.
