- 1 cup cooked black beans, rinsed under cold water for 3 minutes
- 1 cup (8 to 10 ounces) cooked crawfish tails
- 2 tablespoons small diced red pepper
- 1 tablespoon chopped green onion
- 1 teaspoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper
- Combine all and chill until ready to serve. Ladle soup into 8 bowls and serve with the black bean relish.
