- 2 cups cooked dried white beans
- 1/4 cup extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon minced shallots
- 1 teaspoon minced garlic
- 1 tablespoon finely chopped parsley leaves
- Freshly ground black pepper
- In a mixing combine all the ingredients together. Mix well. Season with salt and pepper. Cover and let stand for at least 1 hour.
