Yucca Fries

Instead of regular old French fries, a small taco stand in my neighborhood serves these–deep fried strips of yucca with chipotle ketchup and jalapeno mayo dipping sauces. Muy delicioso! Washed down with a cold cerveza, this was a really great snack. Although, eating two tacos and half a torta with them, did put me over the edge…

I adore yuca frita!! I usually eat them with cirtrusy-garlicky Mojo Criollo, or a spice-spiked crema, but that chipotle ketchup sounds stunning.

Can someone please tell me how to prepare this yucca fries. The ones that are very crispy on the outsite and nice and tender in the middle. I recently had some at a cuban place and been dieing to learn how to make them. Please email me the recipe to kcmooore07063@yahoo.com.

I wrote a recipe for these. They are great with sauces or condiments but they have such a subtle sweet taste that can be easily hidden with something powerful so I simply dress them with lime juice and salt.
I won’t knock the chipotle ketchup though. It’s awesome. I put that stuff on burgers and fries all the time.

Yucca fries are a great alternative to regular fries. The first time I had them was at a Cuban restaurant called La Duni in Dallas. I make a sweet lime mayo for dipping that is fabulous with the sweetness of the yucca.
