Fresh Bacon at Emeril’s

This is a gorgeous, textural and taste riot-of-a-dish from Emeril’s Chef de Cuisine, David Slater.  He calls it “Abita Root Beer Braised ‘Fresh Bacon’ Salad with Citrus Slaw, Marinated Yucca, Heirloom Radish, Shaved Jalapeno, Goat Cheese and Pork Cracklings.”  I call it “Love on a plate.”

    I was just at Emeril’s last Saturday and saw that AMAZING salad on the menu! I didn’t have a chance to try it because Chef Dave cooked a tasting menu for us, but I really wish I would have! Maybe on my next visit…
