Antipasto Skewers

Picture 1 from 20: These tasty antipasto skewers made a great pre-game snack.

I love football and I love cooking, so I was really excited about putting together a game day menu for Super Bowl Sunday.  I had some family and friends over to join me for the big game and for some delicious food.  A lot of us are dieting these days, so I tried to keep the recipes on the lo-cal side.  I made sure to include fresh vegetables into almost every dish and used cooking methods like stir-frying and baking.  Here are some pictures of the festivities so you guys can see.  Enjoy!

    Hi Shawna, here’s the recipe for the Antipasto skewers: http://www.emerils.com/recipe/7926/Antipasto-Skewers

    For the Stir-fry Zucchini, I just added equal parts sliced zucchini, eggplant, asparagus, and white onions. Add a hefty teaspoon to a fry pan over medium high heat. Stir-fry the veggies about 4 minutes, stirring frequently, until asparagus is almost tender and serve! You can adjust the amounts to suit your taste.
