Simple Summer Cantaloupe Salad

Post Author: Jenny McCoy

The melons I am seeing (and tasting) at the farmer’s markets have been just perfect.  So perfect that I hardly want to do anything to them except eat them in slices!

However, for a slightly fancier, and a more savory preparation, try this recipe for a cantaloupe salad:

Slice a ripe cantaloupe in whatever shape and size you desire.  Drizzle with a good quality extra-virgin olive oil, to taste.  Sprinkle with fleur de sel (French sea salt), to taste.  Scatter a few torn pieces of fresh mint leaves on top.  Enjoy on a warm summer day.
