Funky Southwest Pork Loin

  • Yield: 8 to 10 servings


  • One 3 3/4-pound boneless loin pork roast
  • 1 tablespoon plus 2 teaspoons Emeril's Southwest Essence
  • Mojo Paste


  • Preheat the oven 350?F. Line a shallow baking pan with aluminum foil.
  • Place the roast in the pan and rub the Southwest Essence evenly all over it. Spread 1/2 cup of the Mojo Paste on each side of the roast. Bake, uncovered, for 45 minutes, or until an instant-read thermometer inserted in the thickest part reads 110?F. Remove from the oven and spread the remaining 1/3 cup Mojo Paste on the top of the roast. Return the roast to the oven and bake for 15 to 20 minutes longer, or until the thermometer reads 145?F. Let stand for about 10 minutes before slicing crosswise to serve.
