Cheese Quesadillas


  • 16 (7 to 8-inch) tortillas
  • 4 cups grated Monterey Jack cheese
  • 6 teaspoons butter


  • Lay eight tortillas on a work surface. Sprinkle one-half cup cheese over each tortilla. Top with the remaining tortillas. Melt one and one-half teaspoons of the butter in a large skillet over medium heat. Place 1 quesadilla in the skillet. Cook about 3 minutes on each side. Remove from skillet and keep warm. Repeat with remaining quesedillas. Cut into wedges and serve.
