Fresh Oregano Vinaigrette

Ingredients

  • 1/4 cup sherry vinegar
  • 1/2 shallot, peeled and finely diced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh oregano
  • 1 teaspoon honey
  • Salt and freshly ground pepper
  • 1/2 cup pure olive oil

Directions

  • Whisk together vinegar, shallot, mustard, oregano and honey in a small bowl. Season with salt and pepper, to taste. Slowly whisk in olive oil until emulsified.
