Garlic Wine Sauce

  • Yield: 2 cups

Ingredients

  • 3 cups Veal Stock,
  • Brown Chicken Stock, or
  • canned low-sodium beef broth
  • 1 cup dry red wine
  • 1/4 cup plus 2 tablespoons minced shallots
  • 1/4 cup plus 2 tablespoons minced garlic
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 4 tablespoons (1/2 stick) unsalted butter, cut into 4 pieces

Directions

  • Bring the stock, wine, shallots, garlic, salt, and pepper to a boil in a medium heavy nonreactive saucepan, over medium-high heat. Boil until the liquid is reduced by half, about 15 minutes. Remove from the heat. Whisk in the butter, one piece at a time, until the sauce is smooth. Serve immediately.
